Healthy Kids Vegetarian Sloppy Joes Recipe

               
These low-fat Veggie Sloppy Joes are bursting with the sweet, zesty flavors of bbq sauce and stewed tomatoes. Mushrooms, onions, and black beans make up the bulk of of this low-fat, irresistibly saucy dish.

Ingredients
Recipe yields 4 servings
1/2 cup chopped bell pepper
1/2 cup chopped yellow onion
1/2 cup chopped mushrooms
1/2 cup rinsed black beans, drained
1 can (15 1/4 oz) stewed diced tomatoes, drained
1/2 cup bbq sauce
1/4 tsp chili powder
4 2-oz multigrain rolls, sliced in half and toasted

Directions
Step 1

Heat a large nonstick skillet over medium-high heat.

Step 2

Add bell pepper, onion, mushrooms, black beans, tomatoes, barbecue sauce and chili powder and bring mixture to a boil, stirring well.

Step 3

Reduce heat to a simmer and cook until vegetables are tender, about 5 to 8 minutes.

Step 4

Serve open faced on toasted bun halves.
