Gluten Free Chicken Nachos Recipe

               
Make jalapeño-spiked chicken nachos that are saucy, cheesy, and meant to share. This Southwestern-inspired dish uses whole-grain tortilla chips and part-skim cheddar for a healthy spin on traditional nachos loaded with fat.

Recipe yields 4 servings
1 skinless boneless chicken breast
1 tsp chili powder
4 oz whole grain nachos
1/2 cup shredded part-skim cheddar cheese
1/4 cup chopped tomatoes
1/4 cup chopped onion
4 Tbsp chopped fresh jalapeño pepper
6 Tbsp taco sauce
2 Tbsp salsa

Directions
Step 1

Preheat oven to 375°.

Step 2

Sprinkle chicken with chili powder and place in a baking pan. Bake for 15 minutes or until cooked through. Set aside.

Step 3

Preheat broiler. Line a baking sheet with aluminum foil, layer ingredients in the following order: nachos, half the cheese, tomato, onion, jalapenos, taco sauce, salsa and chicken. Sprinkle remaining cheese over nachos.

Step 4

Broil nachos 4 inches from heat for approximately 5 minutes or until cheese is fully melted. Serve immediately.
