Recipe yields 4 servings
Peel the clementines and discard the rind. Remove any stringy pith from the outside of the clementines and discard. Cut the celery or zucchini into small pieces to make the “stems.” Place 1 piece of celery or zucchini into each of the tops of the clementines. Enjoy!
