Add the pistachios and nutritional yeast to a food process or spice mill and grind to the texture of a coarse meal. Transfer to a small mixing bowl and mix in the remaining ingredients until well combined. Set aside.
Place the cut red potatoes into a large pot. Add enough cold water to cover the potatoes by 1 inch. Lightly salt the water. Bring to a boil over high heat. Reduce heat to a simmer and cook until the potatoes are fork tender, about 8 to 10 minutes.
While the potatoes are cooking, place the diced hard-boiled egg, diced hard-boiled egg white, sweet pickle relish, diced celery stalk, sliced green onions, dill, parsley, Greek yogurt, Dijon mustard, black pepper, and 1 tablespoon apple cider vinegar in a large mixing bowl; mix to combine. Add the homemade ranch seasoning; stir to combine. Set aside.
Drain the potatoes into a colander and give them a few gentle shakes to remove any excess water. Transfer the potatoes to a rimmed baking sheet and spread into an even layer. Drizzle the remaining 1 tablespoon apple cider vinegar over the potatoes and gently stir to coat. Let the potatoes cool to room temperature, about 15 minutes.
Transfer the cooled potatoes and a little more than half of the crumbled bacon to the bowl of dressing and gently fold to combine. Season with more black pepper as needed. Sprinkle the remaining bacon over the top of the potato salad. Cover and refrigerate for at least 1 hour or up to 1 day before serving to allow the flavors to meld.
Serve cold and enjoy! Store leftovers in an airtight container in the refrigerator for up to 5 days.
While boiling the red potatoes is the traditional and quickest method, you can also steam them in a steamer basket over boiling water for 10-15 minutes. Steaming prevents the potatoes from absorbing excess water, which helps keep your Greek yogurt dressing thick and creamy rather than watered down.
For the best flavor, allow the potato salad to chill in the refrigerator for at least 1 hour before serving; this gives the homemade ranch spices time to meld with the yogurt and potatoes. Store any leftovers in an airtight container in the fridge for up to 5 days. Do not freeze this salad, as the Greek yogurt will separate and the potatoes will become mealy when thawed.
This creamy, tangy salad is the ultimate side dish for any summer cookout. Pair it with Heart Healthy Grilled Turkey Burgers or Air Fryer Bone-In Pork Chops for a complete, satisfying, and health-conscious meal. It also goes wonderfully alongside grilled vegetables or chicken skewers.
Feel free to swap the nonfat Greek yogurt with low-fat or fat-free sour cream. If you need a dairy-free option, substitute a plain, unsweetened almond or soy milk yogurt. Ensure it is thick to mimic the texture of mayo.
You can easily swap this for turkey bacon to further alter the fat profile, or omit it entirely for a vegetarian dish.
Yukon Gold potatoes have a similarly creamy texture and thin skin that works beautifully in this recipe without needing to be peeled.
