Drizzle with Greek salad dressing, toss to combine, garnish with chopped fresh basil or parsley, and serve. This salad can be enjoyed warm or cold. Alternative Cooking Methods

  • Grill Pan: If you don't have an outdoor grill, you can cook the zucchini and onions on a grill pan on your stovetop over medium-high heat.
  • Oven-Roasting: Toss the zucchini and onion with the oil and spices as directed. Spread them on a baking sheet and roast at 425°F (220°C) for 15-20 minutes, or until tender and lightly browned.

Serving & Storage Tips

  • Serving: This salad is delicious served warm right off the grill or cold as a make-ahead dish.
  • Make-Ahead: You can grill the vegetables and prepare the dressing up to 24 hours in advance. Store them in separate airtight containers in the refrigerator.
  • Storage: For best results, store the undressed salad for up to 3 days. Add the dressing just before serving to prevent the vegetables from becoming soggy.

Ingredient Substitutions

To turn this salad into a complete meal, add grilled chicken for a boost of protein. You can cook the chicken at the same time as the vegetables to save time.

Omit the feta cheese or substitute it with a plant-based feta alternative.

If you don't have chickpeas, you can use white beans or simply leave them out. To add some extra crunch if you are using chickpeas, try making some crispy chickpeas to add on top.

Feel free to use other fresh herbs like mint or dill in place of or in addition to the basil and parsley.

Bulk up the salad by adding bell peppers to the grill or tossing in some fresh cucumber or Kalamata olives.
