Heart Healthy Avocado Toast Recipe

               
This easy avocado toast is topped with a heart-healthy egg and and a touch of lemon zest. Quick, delicious, and customizable, this tasty breakfast recipe is sure to become one of your favorites.

Recipe yields 2 servings
1 ripe avocado, pitted, peeled and mashed
1 tsp lemon zest
Black pepper to taste
2 slices whole grain bread
2 eggs
1/8 tsp salt
1/8 tsp crushed red pepper flakes (optional)

Directions
Step 1

In a small bowl, combine the mashed avocado, lemon zest and black pepper to taste.

Step 2

Toast the bread. Spread the avocado evenly between the 2 slices of toast. Set aside.

Step 3

Lightly coat a skillet with nonstick cooking spray and heat until hot. Crack the eggs into the skillet and cook, untouched, for about 2 minutes.

Step 4

Top each slice of toast and avocado with 1 egg. Season with the salt and red-pepper flakes, if using.
